Lion's Mane (Hericium Erinaceus)
Is made up of many long spines. It is known for having a seafood-like flavour; it most closely resembles crab or lobster. These delicious mushrooms go well in stir fry, on a sandwich, vegan crab cakes, or even just as a simple side dish. They are also known for having anti-inflammatory and anti-oxidant properties and are considered a good dietary source of antioxidants.
